One of my favorite foods that God created are oats. I love using them for my healthy desserts because their not only nourishing to our bodies but in my opinion the absolute best for breakfast or a sweet treat.
Oats are a whole grain food. Whole rolled oats are rich in antioxidants and beta-glucan, a soluble fiber. Fiber is found in foods we eat, which will help you stay full longer and balance your blood sugar level.
I chose berries as the highlight for this recipe because they are packed with antioxidants! The more antioxidants in our diet the better because they help fight against free radicals, which our bodies are constantly coming into contact with. If you’re unfamiliar, free radicals are made from normal cell metabolisms or external sources (chemicals, air pollutants, cigarette smoke, radiation).
For those of you who prefer a sweet breakfast in the morning while also getting a healthy balance of macros (protein, carbohydrates and fat), give this recipe a go. I love the texture of the oats with the yogurt, it makes it extra smooth and creamy. Plus the compote on top with the peanut butter, NOMMMS😋
Ingredients
- 1/2 cup nut milk
- 1/2 cup oats
- 1/4 cup plain Greek yogurt
- 1/2 cup berries
- 1 tsp chia seeds and flax meal
- 1 tbsp peanut butter
- 1/2 tsp vanilla extract
- 1 tbsp honey or few drops of stevia
Berry compote
- 1.5 cups of frozen berries
- 1/4 cup water
- 1 lime juiced
- 1 tbsp honey to few drops of stevia
- 1/2 tbsp arrow root powder
Extra mix ins: pumpkin seeds, dark chocolate chips, coconut flakes
Step 1: To get started, add the milk, oats, yogurt, chia seeds, flax meal, honey/stevia, and vanilla extract to a bowl. Mix well.
Step 2: In a small pot on medium heat add the frozen berries, water, lime juice and honey/ stevia. As the berries defrost begin to mix well. After about 3-4 minutes add the arrow root powder, which will thicken the mixture. Let cool for at least 30 minutes.
Step 3: Add the overnight oats to a mason jar and top with the berry compote, nut butter and extra mix ins as desired.
